I know that a DAQ can generate current from 0 to 20mA. But for measuring / acquiring current, what is the largest / highest value the DAQ SCC-68 can measure? Can it measure current up to 2A?

The SCC-68 can't measure anything. It is just a connector block.
What DAQ card do you have it connected to? The specs on that will tell you the max current you can measure. (But I doubt a device designed for 0-20mA will take a current measurement as large as 2A.)

You need to look for converter which can convert your analog input range to allowable NI analog card input range. If you want to measure 0 - 2A you have to down convert to it to 0-20mA using current transformer if you are measuring AC current.
