How do I increase the font size of the axis labels of plots in labview? can this be done?

Yes, an XY graph or the waveforms

Right click on the graph. Advanced.  Customize.  You can pick the label and change the font, size, and style based on the font picker on the toolbar.

Programmatically you can do it by a property node of the graph.  X scale >> Name label >> Font >> All elements or the individual properties.

Can this also be used to change the fonts of the numbers on the axis?

Yes.  It would be X scale >> Marker >> Font >>  All elements or the individual property for those.
