My employer will be changing soon and I want to retain my personal NI profile with training records and other information that's currently linked to my email with them.  What's the best way to transition from an employer-based profile/email to a private or different employer?  Can I just change to my personal email, or are there pitfalls with that move?

Yes, that is what you do. Just go into your NI profile (not the forum one) and choose to "Edit Profile". In there you can change your email.
