1) change the surface lightning (in the properties dialog) to Smooth.
2) the data in the customer example is obviously interpolated.
3) the data in the customer example is obviously filtered.
All three need to be addressed.
The lightning will make the surface look better in general. But with so little points, it will still look bad.
The person who made the customer image should know what filtering was applied. The data is very noisy, and the noise is not visible in the customer image. So without knowing what they did, we can only speculate.

There is a "Interpolate 2D.vi " in NI_Gmath.lvlib. Benefit might be you don't get a directional bias (first X then Y is not the same as first Y then X). It also supports splines.
