DAQmx (the LabVIEW API that handles data acquisition and lets LabVIEW take this numeric data and plot it, "do things" with it, and save it to an external data file so something "remains after LabVIEW stops running", does not, in itself, "save data", and cannot be use to "recover data that has been saved to disk".
Did your laptop stop functioning? Did its hard drive "crash"? Did someone reformat the hard drive? Did you not make backup copies of your data?
Does your Laptop still run, i.e. can you start Windows and run LabVIEW? If so, bring your laptop to a service that can attempt to recover all the data that is currently on the disk. Even if you accidentally deleted all your own data, if you haven't written over it yet, a data recovery service should be able to "recover" much of it for you.
