One problem is that if you would just remove the outside points, the graph will connect the edge points. If you want gaps, you should use a plot style that has no interpolation.
If you want to just hide all outside points, you can substitute NaN.
If you just want to zoom into the range between the cursors, you could just change the Ymax and Ymin via property nodes and disable Y autoscale.
You simply need to decide what you want!
