Which port should I use?

Which port should I use if my device output is a 12 pin ribbon cable? Can I adapt it and feed it to the GPIB port?

Only if it is a GPIB bus which it is not since there are only 12 wires.

If the device in question is the CMOS sensor then you should be able to follow the instructions in the data sheet to collect the VOUT1 and VOUT2 signals.  I'm not sure if a standard video capture card would work with that sensor.

I'd recommend calling the device manufacturer and asking them the best way to interface with the sensor.
