I see that LabVIEW specifically mentions running with Windows Enterprise:
LabVIEW and Microsoft Windows Compatibility - NI
But there is no similar listing for the LabWindows/CVI page:
Supported Operating Systems for LabWindows™/CVI™ - NI
This makes me think there may be some compatibility differences, since clearly NI knows of this flavor of Windows.

Windows 10 IoT Enterprise is basically the x86/x64 version of Windows IoT, compatible with standard Windows desktop. The difficulty with IoT Enterprise is that it can be configured in very broad ranges what it really installs and that might be not enough for the LabVIEW and/or LabWindows/CVI development environment. But unless you try it on a really restricted IoT installation with many of the subsystems disabled or not installed, it should still work.
Since Windows IoT Enterprise can selected to be installed with very restricted support, there is not simple way of saying that it will simply work on a specific installation. For LabVIEW they did go through the trouble of specifying that it is compatible with Windows IoT Enterprise (but not any of the other IoT versions) but they never went to the trouble with CVI since honestly CVI is not actively maintained anymore since 2020.

Thanks. Yet another item that will encourage my management to allow us to move away from LabWindows.
