There's a "Using Linux on a PXI Embedded Controller" webpage
is it possible to install real-time Linux onto one of these listed PXI embedded controllers and run VIs on it as a RT target?

No, this is not available. You cannot use NI Linux Real-Time on PXI(e) controllers with the LabVIEW Real-Time module.
There is a specific use case with LabVIEW Communications System Design Suite where NI Linux Real-Time is used on PXI(e) controllers, but this is not fully featured and is design for this specific use case.

Yes, NI Linux RT (and LabVIEW Real-Time) is supported on most/all current PXIe Controllers.
Check the OS options on the product page for the controller you are interested. Here is for example the page for PXIe-8862: https://www.ni.com/en-us/shop/model/pxie-8862.html. Notice "LabVIEW Real-Time (NI Linux Real-Time)" listed in "Controller OS" drop down menu.
The comment that got posted about support being only for "specific use case with LabVIEW Communications System Design Suite" is old/outdated.
