The reason you don't see the info publicly is because NI felt that their customers don't need to know about what chips they use on their board as long as their instrument as a whole works within the datasheet specifications.
Given your extreme interest, there are only two ways - ask NI for details or buy a card, take apart and characterize the ADC yourself.
